1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
3 cups beef broth
1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
2 1/2 cups egg noodles (uncooked)
1 cup shredded cheddar cheese
1/4 cup sour cream
Fresh parsley, for garnish (optional)
In a large skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess grease if needed.
Add garlic, salt, pepper, and paprika. Stir and cook for 1 minute until fragrant.
Stir in the beef broth and cream of mushroom soup until well combined.
Add the uncooked egg noodles and bring the mixture to a gentle boil.
Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally, until noodles are tender.
Stir in cheddar cheese and sour cream until melted and creamy.
Let rest for a few minutes before serving. Garnish with parsley if desired.
For extra veggies, add frozen peas or chopped spinach in the last 5 minutes of cooking.
Swap ground beef for ground turkey or chicken if preferred.
Use wide egg noodles for a more traditional texture.
