For the Dish:

  • 1 lb ground beef
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 tbsp olive oil or butter
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1/2 cup beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the Tortellini:
    • Bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.
  2. Cook the Ground Beef:
    • In a large skillet, heat olive oil or butter over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain excess fat and set the beef aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
  4. Make the Creamy Sauce:
    • Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
    • Stir in the heavy cream, Parmesan cheese, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Let the sauce simmer gently for 3-4 minutes until slightly thickened.
  5. Combine and Heat:
    • Add the cooked ground beef and tortellini to the skillet. Toss gently to coat everything in the creamy sauce. Let it heat through for 2-3 minutes.
  6. Serve:
    • Garnish with chopped parsley and extra Parmesan cheese. Serve hot with a side of garlic bread or a fresh salad.

Notes

  • For added flavor, stir in 1/4 cup of sun-dried tomatoes or sautéed mushrooms.
  • If the sauce becomes too thick, thin it out with a splash of milk or more beef broth.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
