2 lbs beef stew meat or sirloin tips, cut into chunks
2 tbsp vegetable oil
1 medium onion, diced
2 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp onion powder
1/2 tsp dried thyme
1/4 cup all-purpose flour
1/4 cup water
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
In a large skillet or Dutch oven, heat vegetable oil over medium-high heat.
Add beef tips in batches and brown on all sides. Remove and set aside.
In the same skillet, add diced onion and cook for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
Return beef to the pan. Add beef broth, Worcestershire sauce, onion powder, thyme, salt, and pepper. Stir to combine.
Bring to a simmer, cover, and reduce heat to low. Cook for 1.5 to 2 hours, or until beef is tender.
In a small bowl, whisk together flour and water to make a slurry. Gradually stir into the beef mixture to thicken the gravy.
Simmer uncovered for an additional 5–10 minutes until the gravy is thickened.
Serve hot over mashed potatoes, rice, or noodles. Garnish with chopped parsley if desired.
Notes
Use sirloin tips for a more tender cut of beef.
For extra richness, add a splash of red wine while simmering the beef.
This dish can be made in a slow cooker—just add all ingredients except the slurry and cook on low for 6–8 hours, then thicken at the end.
