This creamy Beer Cheese Dip blends sharp cheddar with smooth beer and warm spices for the ultimate party appetizer. It’s rich, melty, and just the right amount of bold—serve it hot with soft pretzels, tortilla chips, or veggies!

Ingredients

  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon onion powder

  • ½ teaspoon Dijon mustard

  • ½ teaspoon Worcestershire sauce

  • ½ cup whole milk

  • ¾ cup beer (lager, pilsner, or ale)

  • 2 cups shredded sharp cheddar cheese

  • Salt and pepper, to taste

Instructions

  1. Make a Roux:
    In a medium saucepan over medium heat, melt butter.
    Whisk in flour, garlic powder, paprika, and onion powder. Cook 1–2 minutes, stirring constantly, until smooth and fragrant.

  2. Add Liquids:
    Slowly whisk in the milk until smooth.
    Gradually pour in the beer while whisking to keep it lump-free.
    Stir in Dijon mustard and Worcestershire sauce.

  3. Add Cheese:
    Lower the heat to low. Add shredded cheddar a handful at a time, stirring until melted and fully combined.

  4. Taste & Serve:
    Season with salt and pepper as needed.
    Serve hot with soft pretzels, chips, bread cubes, or fresh veggies.

Notes

  • Beer Choice: A lighter beer (like lager or pilsner) gives a milder flavor, while a darker ale or IPA gives a stronger, hoppier taste.

  • Make it spicy: Add a pinch of cayenne or a dash of hot sauce.
