A rich and colorful pasta sauce made from beets, offering a naturally sweet, earthy flavor perfect for a unique and healthy pasta dish.

Ingredients

  • 2 medium beets, cooked and peeled
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup cream or coconut cream for dairy-free
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup pasta cooking water

Instructions

  1. Boil or roast the beets until tender, then peel and cut into chunks.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Place the beets, sautéed onion and garlic, cream, lemon juice, and cheese (if using) into a blender. Blend until smooth.
  5. Return the sauce to the pan and heat gently. Add pasta water to reach desired consistency.
  6. Season with salt and pepper. Toss with cooked pasta and serve warm.
