Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon ground cumin
  • 1/2 cup tomato sauce
  • 1/4 cup water
  • 1 (15 oz) can refried beans
  • 1 cup cooked rice (optional)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 4 large flour tortillas (burrito size)
  • Optional toppings: sour cream, salsa, lettuce, guacamole

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until soft, about 3 minutes.
  2. Add ground beef and cook, breaking it up, until browned. Drain excess grease.
  3. Add garlic, taco seasoning, cumin, tomato sauce, and water. Simmer for 5 minutes until thickened.
  4. Warm refried beans in a small saucepan or microwave.
  5. Warm tortillas slightly to make them more pliable.
  6. Assemble burritos: spread a layer of refried beans on each tortilla, then top with beef mixture, rice (if using), and cheese.
  7. Fold in the sides and roll up the burritos tightly.
  8. Optional: Place seam-side down in a hot skillet for 1-2 minutes per side to crisp and seal.
  9. Serve hot with desired toppings.

Notes

  • Burritos can be wrapped in foil and frozen for up to 2 months. Reheat in the microwave or oven.
  • Adjust spice level by adding hot sauce or chopped jalapeños to the beef mixture.
  • Great with a side of tortilla chips and salsa or a simple salad.
