This Breakfast Casserole with Sausage is a hearty and delicious way to start your day. Packed with savory sausage, fluffy eggs, melty cheese, and a golden brown topping, it’s perfect for feeding a crowd or meal prepping for the week!

Ingredients

Scale
  • 1 lb (450 g) ground breakfast sausage
  • 6 large eggs
  • 2 cups (480 ml) milk (whole milk or 2%)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices of bread, cubed (white, whole wheat, or French bread)
  • 2 cups (200 g) shredded cheddar cheese
  • 1/4 cup (25 g) shredded Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley (for garnish, optional)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the sausage:
    • Heat a large skillet over medium heat. Cook the ground sausage until browned and fully cooked, breaking it into small crumbles. Drain excess grease and set aside.
  3. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Assemble the casserole:
    • Spread the cubed bread evenly across the bottom of the prepared baking dish. Top with the cooked sausage, followed by the shredded cheddar cheese.
    • Pour the egg mixture evenly over the sausage and cheese. Press down gently to ensure the bread soaks up the liquid.
  5. Add the finishing touches:
    • Sprinkle the top with Parmesan cheese, if using.
  6. Bake:
    • Bake uncovered for 35-40 minutes, or until the casserole is set and the top is golden brown. Insert a knife in the center to check if it comes out clean.
  7. Garnish and serve:
    • Let the casserole cool for 5 minutes before slicing. Garnish with chopped parsley and serve warm.

Notes

  • Make-ahead option: Assemble the casserole the night before, cover, and refrigerate. Bake it fresh in the morning, adding 5-10 minutes to the cooking time.
  • Vegetarian version: Replace sausage with sautéed vegetables like mushrooms, spinach, or bell peppers.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
