1 1/2 pounds ground beef (80% lean)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
4 burger buns
4 slices cheddar or American cheese (optional)
Butter or oil for toasting buns
Lettuce, tomato, pickles, onions, and condiments, for serving
Instructions
Preheat grill or skillet over medium-high heat. Lightly oil the grates or pan.
In a bowl, gently mix ground beef with salt, pepper, and garlic powder. Do not overmix.
Divide beef into 4 equal portions and shape into patties about 3/4-inch thick. Make a small indentation in the center of each patty to prevent puffing.
Grill or sear patties for about 3–4 minutes per side, or until they reach your desired doneness (160°F internal temp for medium-well).
Add cheese during the last minute of cooking, if using, and cover to melt.
Toast burger buns with a little butter or oil until golden.
Assemble burgers with your favorite toppings and condiments. Serve immediately.
Notes
80/20 beef gives the juiciest results.
Do not press down on burgers while cooking — this squeezes out juices.
Rest burgers for a couple minutes before serving for maximum juiciness.
