Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1 ½ cups buttermilk (or 1 ½ cups milk + 1 tablespoon vinegar, let sit for 5 minutes)
  • 2 eggs
  • ¼ cup melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract

For Cooking:

  • Butter or oil for greasing the pan

Optional Toppings:

  • Maple syrup
  • Fresh berries
  • Whipped cream
  • Powdered sugar

Instructions

1. Prepare the Batter

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  3. Gently pour the wet ingredients into the dry ingredients and mix until just combined. (Do not overmix—lumps are okay!)
  4. Let the batter rest for 5-10 minutes for extra fluffiness.

2. Cook the Pancakes

  1. Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
  2. Pour ¼ cup of batter onto the pan for each pancake.
  3. Cook until bubbles form on the surface and the edges look set (2-3 minutes).
  4. Flip and cook for 1-2 minutes more, until golden brown.
  5. Repeat with the remaining batter.

Notes

  • Extra fluffy? Use cake flour instead of all-purpose or separate the eggs and fold in whipped egg whites.
