4 slices thick-cut sourdough or artisan bread
2 tbsp butter, softened
1 cup cooked lobster meat, chopped (claw and tail meat work best)
1 tbsp mayonnaise
1 tsp lemon juice
1/2 tsp Old Bay seasoning (optional)
1/2 cup shredded mozzarella cheese
1/2 cup shredded white cheddar cheese
1/4 cup shredded Gruyère or fontina cheese (for extra melt and flavor)
Pinch of salt and pepper
Mix Lobster Filling: In a small bowl, combine chopped lobster meat, mayo, lemon juice, Old Bay seasoning (if using), salt, and pepper.
