This hearty and comforting pork chop potato casserole is made with tender pork chops, seasoned potatoes, and a creamy sauce, all baked to perfection for a delicious family meal.

  • 4 boneless pork chops
  • 4 large potatoes, peeled and sliced thinly
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 can (10 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp butter (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. In a skillet, heat olive oil over medium heat. Season the pork chops with salt, pepper, and thyme. Sear the pork chops for 2-3 minutes per side until lightly browned. Remove from heat and set aside.
  3. In a large mixing bowl, combine cream of mushroom soup, sour cream, milk, minced garlic, and 1/4 cup of the shredded cheddar cheese. Season with salt and pepper to taste.
  4. Layer the sliced potatoes and onion in the bottom of the prepared baking dish. Season with a little salt and pepper between layers.
  5. Pour the soup mixture over the potatoes and onions, making sure they are evenly coated.
  6. Place the seared pork chops on top of the potato mixture, pressing them gently into the casserole.
  7. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and sprinkle the remaining shredded cheddar cheese over the casserole. If using, sprinkle breadcrumbs on top and dot with butter for a crispy topping.
  8. Return the casserole to the oven and bake for another 15-20 minutes, until the pork chops are cooked through (internal temperature should reach 145°F/63°C) and the potatoes are tender.
  9. Let the casserole rest for 5 minutes before serving. Enjoy!
