Makes about 24 pieces:

  • For the toffee base:
    • 1 cup (225 g) unsalted butter
    • 1 cup (200 g) granulated sugar
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
  • For the topping:
    • 1 cup (175 g) semi-sweet or milk chocolate chips
    • 1/2 cup (60 g) chopped pecans, almonds, or walnuts

Instructions

  • Prepare the pan:
    • Line a 9×13-inch (23×33 cm) baking sheet or pan with parchment paper, leaving overhangs for easy removal.
  • Cook the toffee:
    • In a medium saucepan, melt the butter over medium heat. Stir in the sugar and salt.
    • Cook, stirring constantly, until the mixture reaches 285°F (140°C) on a candy thermometer (hard crack stage). This should take about 10 minutes. The mixture will turn a golden brown color.
  • Add vanilla:
    • Remove the saucepan from heat and carefully stir in the vanilla extract.
  • Pour the toffee:
    • Immediately pour the toffee onto the prepared baking sheet, spreading it evenly with a spatula or spoon.
  • Add the chocolate:
    • Sprinkle the chocolate chips over the hot toffee. Let them sit for 2-3 minutes to melt, then spread the chocolate evenly with a spatula.
  • Sprinkle the nuts:
    • Sprinkle the chopped nuts over the melted chocolate, pressing them gently into the surface.
  • Cool and break:
    • Allow the toffee to cool completely at room temperature or in the refrigerator until firm (about 2 hours).
    • Once set, break the toffee into pieces.

Notes

  • Be sure to stir constantly while cooking the toffee to prevent burning.
  • Store toffee in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
  • For variety, use white or dark chocolate and swap the nuts for shredded coconut or candy sprinkles.
