These Birthday Cookie Bars are chewy, buttery, and packed with colorful sprinkles for a festive treat that’s perfect for any celebration. With the flavors of a classic sugar cookie in a bar form, they’re quick to make and easy to serve. Perfect for parties, potlucks, or as a sweet surprise for someone special!

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1/2 cup rainbow sprinkles (plus extra for topping)
  • Optional: 1/2 cup white chocolate chips or birthday cake-flavored chips

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a 9×13-inch baking pan with parchment paper or grease it lightly.
  • Mix Dry Ingredients:
    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Combine Wet Ingredients:
    • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
    • Add the egg, egg yolk, and vanilla extract. Whisk until fully combined.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the sprinkles and white chocolate chips (if using) with a spatula.
  • Spread the Dough:
    • Press the cookie dough evenly into the prepared baking pan.
    • Sprinkle a few extra sprinkles on top for decoration.
  • Bake:
    • Bake for 20–25 minutes, or until the edges are lightly golden and the center is set.
    • Remove from the oven and let cool completely in the pan.
  • Cut and Serve:
    • Once cooled, lift the bars out of the pan using the parchment paper.
    • Cut into squares or rectangles and serve!

Notes

  • For extra festive flavor, substitute 1 tsp of vanilla extract with 1 tsp of almond extract.
  • Store leftovers in an airtight container at room temperature for up to 5 days.
  • These bars can be frozen for up to 3 months. Thaw at room temperature before serving.
