This Blackstone Chicken Stir Fry is a quick and easy dinner packed with juicy chicken, crisp veggies, and a savory stir fry sauce. Cooked on a Blackstone griddle, everything comes together fast with bold flavors and a perfect char. It’s great for weeknight meals or meal prep.

  • 1.5 lbs boneless skinless chicken breasts, diced

  • 2 tablespoons olive oil (or sesame oil)

  • 2 cups broccoli florets

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup snap peas

  • 1 medium carrot, julienned

  • 1 small onion, sliced

  • 3 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 1 tablespoon hoisin sauce

  • 1 teaspoon sesame oil (for flavor)

  • Salt and black pepper, to taste

  • Green onions and sesame seeds (for garnish)

  • Cooked rice or noodles, for serving (optional)


Instructions

  1. Preheat your Blackstone griddle to medium-high heat.

  2. Drizzle olive oil over the hot griddle. Add diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.

  3. Push the chicken to one side of the griddle. On the other side, add a bit more oil if needed and toss on the veggies: broccoli, bell peppers, snap peas, carrots, onion, and garlic. Stir fry for 4-5 minutes until crisp-tender.

  4. Mix the chicken and veggies together on the griddle.

  5. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, and sesame oil. Pour the sauce over the stir fry and toss everything to coat evenly.

  6. Cook for another 1-2 minutes until everything is well combined and heated through.

  7. Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles if desired.

Notes

  • Swap in your favorite stir fry vegetables—zucchini, mushrooms, or baby corn work great.

  • You can use chicken thighs for extra flavor.

  • Adjust sauce ingredients to your taste—add sriracha or chili flakes for spice.
