  • 2 tbsp vegetable oil (or butter)
  • 1 tbsp sesame oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce (adjust to taste)
  • 1 tbsp oyster sauce (optional, for extra umami)
  • ½ tsp black pepper
  • ½ tsp salt (adjust as needed)
  • 2 green onions, sliced (for garnish)

Optional Proteins:

  • 1 cup cooked chicken (diced or shredded)
  • 1 cup cooked shrimp
  • 1 cup diced steak or pork
  • 1 cup tofu (for a vegetarian version)

Instructions

1. Preheat the Blackstone Griddle:

  • Set your Blackstone griddle to medium-high heat (about 375-400°F).
  • Add vegetable oil and spread it evenly across the surface.

2. Cook the Vegetables:

  • Add diced onions, peas, and carrots to the griddle.
  • Sauté for 3-4 minutes until softened.
  • Stir in minced garlic and cook for another 30 seconds.

3. Cook the Eggs:

  • Push the veggies to one side of the griddle.
  • Pour the beaten eggs onto the griddle and scramble them until just set.
  • Mix the eggs with the vegetables.

4. Add the Rice & Protein:

  • Spread the chilled rice evenly over the griddle.
  • Pour sesame oil over the rice and toss to combine.
  • Add your choice of protein and stir everything together.

5. Season & Finish:

  • Drizzle soy sauce and oyster sauce over the rice.
  • Season with black pepper and salt to taste.
  • Toss everything together for 3-5 minutes until heated through and slightly crispy.

6. Serve & Enjoy:

  • Garnish with sliced green onions and serve hot!
  • Optional: Drizzle with yum yum sauce or spicy mayo for extra flavor.

Notes

  • For extra crispy rice, let it sit on the griddle for a minute before tossing.
  • Want a spicier kick? Add a dash of Sriracha or red pepper flakes.
