This Blackstone steak udon is a mouthwatering stir-fry featuring tender steak, chewy udon noodles, and a savory, umami-rich sauce. Cooked on a hot Blackstone griddle, it delivers the perfect sear and caramelization for a restaurant-quality dish at home!

Ingredients

For the Steak & Udon:
  • 1 lb ribeye or sirloin steak, thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 tablespoons cornstarch (for a crispy sear, optional)
  • 2 tablespoons vegetable oil (for cooking)
  • 2 packs (14 oz each) fresh or frozen udon noodles (pre-cooked)
For the Stir-Fry Sauce:
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
For the Vegetables (Optional):

 

  • 1 cup sliced mushrooms
  • ½ cup bell peppers, thinly sliced
  • ½ cup sliced onions
  • 2 green onions, chopped (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Preheat the Blackstone: Heat your griddle to medium-high heat (400°F) and drizzle with vegetable oil.

  2. Marinate the steak: In a bowl, toss the thinly sliced steak with soy sauce, sesame oil, garlic powder, black pepper, and cornstarch (if using). Let it sit for 10 minutes while the griddle heats up.

  3. Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, honey, rice vinegar, sriracha, garlic, and ginger. Set aside.

  4. Sear the steak: Add the steak to the hot griddle and cook for 2-3 minutes per side until caramelized and slightly crispy. Push to one side of the griddle.

  5. Stir-fry the vegetables: Add mushrooms, bell peppers, and onions to the other side of the griddle. Cook for 3-4 minutes until tender.

  6. Cook the udon noodles: Add the pre-cooked udon noodles to the griddle. Pour half of the stir-fry sauce over them and toss with spatulas until coated and slightly caramelized.

  7. Combine everything: Mix the steak, vegetables, and noodles together. Pour the remaining sauce over the mixture and stir-fry for another 2 minutes.

  8. Serve hot: Garnish with green onions and sesame seeds. Serve immediately!

Notes

  • No udon noodles? Use ramen, lo mein, or even spaghetti!
  • Prefer a smoky flavor? Add a splash of liquid smoke to the sauce or use smoked salt.

 

  • Want it spicier? Add more sriracha or chili flakes.
