1/2 cup unsalted butter, softened
1/2 cup fresh or frozen blueberries
2–3 tablespoons honey or powdered sugar (to taste)
1/2 teaspoon lemon juice
Pinch of salt
Cook the blueberries:
In a small saucepan over medium heat, cook blueberries and lemon juice for 3–5 minutes, stirring occasionally, until the berries burst and the mixture thickens slightly.
Remove from heat and let cool completely.
Make the butter:
In a bowl or food processor, blend the softened butter with honey (or sugar) and salt until smooth and creamy.
Combine:
Add the cooled blueberry mixture to the butter and mix until fully combined. You can leave it slightly chunky or blend it smooth.
Serve or store:
Transfer to a jar or small container. Serve immediately or refrigerate for up to 1 week. For best flavor, bring to room temperature before spreading.
