Ingredients

Scale
  • 1 cup dried blueberries
  • 1 cup graham cracker crumbs (or almond flour for gluten-free)
  • ½ cup cream cheese, softened
  • ½ cup shredded coconut (plus extra for rolling)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for a tangy kick)

Instructions

  1. Blend Ingredients:
In a food processor, combine dried blueberries, graham cracker crumbs, cream cheese, shredded coconut, honey, vanilla extract, and lemon juice (if using). Blend until the mixture forms a sticky dough.
  2. Chill the Dough:
Transfer the mixture to a bowl and refrigerate for 15-20 minutes to firm up.
  3. Form the Bliss Balls:
Using your hands, roll tablespoon-sized portions of the mixture into balls.
  4. Roll in Coconut:
Place extra shredded coconut in a shallow bowl and roll each bliss ball in the coconut to coat.
  5. Chill and Serve:
Refrigerate the bliss balls for at least 30 minutes before serving to allow them to set. Store any leftovers in an airtight container in the refrigerator.

Notes

  • Storage: Bliss balls can be stored in the refrigerator for up to a week or frozen for up to 3 months.
  • Flavor Variations: Swap blueberries for dried cranberries or cherries for a different flavor profile.
  • Nut-Free Option: Use crushed graham crackers instead of almond flour for nut-free bliss balls.
