2 cups fresh blueberries
2 cups corn kernels (fresh or thawed frozen)
1 large avocado, diced
1 cup cherry tomatoes, halved
1/2 cup diced cucumber
1/4 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
2 tbsp olive oil
2 tbsp fresh lime juice
1 tbsp honey or maple syrup
Salt and black pepper, to taste
Instructions
In a large bowl, combine blueberries, corn, diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
Pour dressing over the salad and toss gently to combine.
Serve immediately or chill for up to 1 hour before serving.
Notes
For extra flavor, add crumbled feta or cotija cheese.
