Blueberry Oatmeal Breakfast Bars are soft, chewy bars made with wholesome oats, fresh or frozen blueberries, and a hint of honey—perfect for a healthy, make-ahead breakfast or snack.

Ingredients

Scale
  • 2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup coconut oil or unsalted butter, melted
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 tbsp brown sugar (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix oats, flour, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. In a small bowl, toss blueberries with cornstarch and lemon juice.
  6. Press about 2/3 of the oat mixture into the bottom of the prepared baking dish to form a crust.
  7. Evenly spread the blueberry mixture over the crust.
  8. Crumble the remaining oat mixture over the blueberries and sprinkle with brown sugar if using.
  9. Bake for 30–35 minutes, or until the top is golden brown and the center is set.
  10. Cool completely in the pan before cutting into bars.
