1 1/2 pounds ground beef (85% lean)
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
8 ounces mushrooms, sliced
1 medium onion, sliced
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon tomato paste
1 tablespoon Dijon mustard
Instructions
In a large bowl, mix ground beef, breadcrumbs, egg, milk, chopped onion, garlic, Worcestershire sauce, salt, and pepper until just combined.
Form into 4-6 oval patties.
Heat olive oil in a skillet over medium-high heat. Sear patties on both sides until browned, about 3-4 minutes per side. Remove and set aside.
In the same skillet, add butter. Sauté sliced mushrooms and onions until softened and browned, about 6-8 minutes.
Sprinkle flour over mushrooms and onions. Stir and cook for 1-2 minutes.
Gradually whisk in beef broth, tomato paste, and Dijon mustard. Bring to a simmer and cook until thickened, about 3-4 minutes.
Return patties to skillet. Spoon gravy over them, cover, and simmer for 10-15 minutes until fully cooked through.
Serve hot with mashed potatoes or vegetables.
Notes
Do not overmix the meat mixture to avoid tough patties.
You can use a mix of ground beef and ground pork for added flavor.
