  • 1 tablespoon yellow mustard (or Dijon mustard)
  • 1/4 cup (30 g) finely chopped onion (optional)
  • Salt and pepper, to taste

For garnish (optional):

  • Chopped parsley
  • Paprika

Instructions

  1. Grind the bologna:
    • Place the chopped bologna in a food processor. Pulse until finely ground but not a paste.
  2. Mix the salad:
    • In a large bowl, combine the ground bologna, mayonnaise, pickle relish, mustard, and onion (if using). Mix well until everything is evenly incorporated.
  3. Season:
    • Taste and adjust seasoning with salt and pepper, as needed.
  4. Chill:
    • Cover and refrigerate for at least 1 hour to let the flavors meld.
  5. Serve:
