2 1/2 cups crushed vanilla wafers (about 1 box)
1 cup finely chopped pecans or walnuts
1 cup powdered sugar
2 tbsp unsweetened cocoa powder
1/2 cup bourbon
2 tbsp light corn syrup (or honey)
Extra powdered sugar, cocoa powder, or finely chopped nuts for rolling
In a large bowl, combine crushed vanilla wafers, chopped nuts, powdered sugar, and cocoa powder.
In a small bowl, stir together bourbon and corn syrup.
Pour the wet mixture over the dry ingredients and mix well until fully combined.
Roll the mixture into 1-inch balls.
Roll each ball in powdered sugar, cocoa powder, or chopped nuts (your choice).
Place on a baking sheet lined with parchment paper. Cover and refrigerate for at least 2 hours to let the flavors develop.
Store in an airtight container in the fridge for up to 2 weeks.
For a sweeter bite, use honey instead of corn syrup.
Bourbon balls taste even better after a day or two.
You can toast the nuts beforehand for deeper flavor.
