Braised cabbage is a simple yet flavorful side dish, slowly cooked until tender with onions, garlic, and a splash of vinegar for brightness.

Ingredients

  • 1 medium green cabbage, cored and sliced
  • 2 tbsp olive oil or butter
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup vegetable or chicken broth
  • 2 tbsp apple cider vinegar
  • 1 tsp sugar (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large skillet or Dutch oven over medium heat.
  2. Add the sliced onion and cook for 5 minutes until softened.
  3. Stir in the garlic and cook for another 1 minute until fragrant.
  4. Add the sliced cabbage and stir well to coat with the oil, onion, and garlic.
  5. Pour in the broth and vinegar, then add sugar if using. Season with salt and pepper.
  6. Cover and cook over low heat for 25-30 minutes, stirring occasionally, until the cabbage is very tender.
  7. Adjust seasoning to taste and serve warm.

Notes

  • Red cabbage can be used for a more colorful variation.
  • Add caraway seeds or a pinch of chili flakes for extra flavor.
  • For a richer taste, use bacon fat instead of olive oil or butter.
