These fluffy, cheesy, and savory stuffed biscuits are packed with scrambled eggs, crispy bacon (or sausage), and melty cheese—all wrapped in golden dough. Perfect for a quick breakfast, meal prep, or on-the-go snack!

  • 1 can (8-count) refrigerated biscuit dough (or homemade biscuit dough)
  • 4 large eggs
  • ¼ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup cooked bacon or sausage, crumbled
  • ½ cup shredded cheddar cheese (or mozzarella)
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp everything bagel seasoning (optional, for topping)

Instructions

1. Preheat & Prep

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or grease it lightly.

2. Cook the Scrambled Eggs

  1. In a bowl, whisk eggs, milk, salt, and pepper.
  2. Heat a pan over medium heat and scramble the eggs until just set.
  3. Stir in cooked bacon or sausage and remove from heat.

3. Assemble the Breakfast Bombs

  1. Flatten each biscuit dough piece into a 3-4 inch circle.
  2. Place a spoonful of scrambled eggs in the center.
  3. Add a sprinkle of cheese on top.
  4. Fold the dough over the filling, pinching the edges to seal.

4. Bake

  1. Place the sealed bombs seam-side down on the baking sheet.
  2. Brush with melted butter and sprinkle with garlic powder & bagel seasoning.
  3. Bake for 12-15 minutes, until golden brown.

5. Serve & Enjoy

  • Let cool for 5 minutes, then enjoy warm!


Notes

  • Make them ahead and freeze for up to 2 months—just reheat in the oven.
  • Swap bacon for veggies like spinach & bell peppers for a vegetarian version.
  • Try using crescent roll dough for a flakier texture.
