4 large flour tortillas
6 eggs
1/4 cup milk
1 cup shredded cheddar cheese
1 cup cooked breakfast sausage or bacon, chopped
1 cup cooked diced potatoes or hash browns
1/2 cup diced bell peppers (optional)
1/4 cup chopped green onions
Salt and pepper to taste
1 tbsp butter or oil for cooking
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper.
Heat butter or oil in a skillet over medium heat. Add eggs and scramble until cooked through. Remove from heat.
Warm tortillas in the microwave or in a dry skillet for 10–15 seconds until pliable.
Lay each tortilla flat and fill with scrambled eggs, cheese, cooked sausage or bacon, potatoes, bell peppers (if using), and green onions.
Fold in the sides and roll up tightly to form a burrito.
Serve immediately, or wrap in foil to keep warm. Optionally grill in a skillet for a crispy outside.
Notes
You can make them ahead and freeze individually for quick breakfasts.
Customize with salsa, hot sauce, or avocado slices.
For a vegetarian version, skip the meat and load up on veggies and beans.
