This Breakfast Fried Rice is a delicious twist on a classic dish, packed with fluffy scrambled eggs, crispy bacon (or sausage), and hearty veggies. It’s the perfect way to use up leftover rice and makes for a quick, satisfying meal any time of the day!

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 4 slices bacon, chopped (or ½ cup cooked sausage, crumbled)
  • 2 eggs, beaten
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup spinach (or kale), chopped (optional)
  • 2 green onions, chopped
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder (or 1 clove garlic, minced)
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)

Instructions

  1. Cook the Bacon & Veggies:

    • Heat a large skillet over medium heat.
    • Cook the bacon until crispy, then remove and set aside, leaving about 1 tbsp of bacon grease in the pan.
    • Add diced bell peppers and onions, cooking until softened (about 2-3 minutes).
  2. Scramble the Eggs:

    • Push the veggies to one side of the skillet.
    • Pour the beaten eggs into the other side and scramble until fully cooked.
  3. Fry the Rice:

    • Add the cooked rice to the skillet and stir everything together.
    • Pour in soy sauce, sesame oil, garlic powder, black pepper, and red pepper flakes (if using).
    • Stir-fry for 2-3 minutes until heated through.
  4. Finish & Serve:

    • Stir in the cooked bacon, spinach (if using), and green onions.
    • Cook for another minute, then remove from heat.
    • Serve hot and enjoy!


Notes

  • Make it vegetarian: Skip the bacon and add mushrooms or tofu for extra protein.
  • Use cold rice: Freshly cooked rice can get mushy, so day-old rice works best for fried rice.
  • Add more protein: Try adding diced ham, shredded chicken, or even breakfast sausage!
