4 large flour tortillas
6 large eggs
1/4 cup milk
1 cup shredded cheddar or Mexican blend cheese
4 slices cooked bacon or 1/2 cup cooked sausage (optional)
1/4 cup diced bell peppers (optional)
2 tablespoons butter
Salt and black pepper, to taste
1 tablespoon chopped fresh cilantro (optional)
Instructions
In a bowl, whisk together eggs, milk, salt, and pepper.
In a skillet over medium heat, melt 1 tablespoon butter. Add eggs and cook, stirring, until just set. Remove from heat.
Lay tortillas flat and sprinkle half the cheese on one side of each tortilla.
Divide scrambled eggs, cooked bacon or sausage, and bell peppers evenly over the cheese. Top with remaining cheese and fold tortillas in half.
Wipe out skillet, melt remaining butter, and cook quesadillas 2–3 minutes per side until golden brown and cheese is melted.
Slice into wedges and garnish with cilantro if desired. Serve with salsa, sour cream, or avocado.
Notes
Customize with your favorite veggies or swap bacon for sausage.
Use whole-wheat tortillas for extra fiber.
Cook over medium heat to avoid burning the tortillas before the cheese melts.
