For the Dough (Optional, if making from scratch):

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 tsp salt
  • 2 tbsp sugar
  • 1 cup warm milk (110°F/43°C)
  • 1/4 cup unsalted butter, melted
  • 1 large egg

For the Filling:

  • 6 large eggs
  • 1/4 cup milk or cream
  • Salt and pepper, to taste
  • 1 tbsp butter (for scrambling eggs)
  • 6 slices bacon, cooked and crumbled (or 1/2 cup cooked sausage or ham)
  • 1 cup shredded cheddar cheese

For Brushing:

  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder (optional, for savory flavor)

Instructions

Make the Dough (Skip if using store-bought dough):

  1. Prepare the Dough:
    • In a large bowl, mix the flour, yeast, salt, and sugar. Add the warm milk, melted butter, and egg. Knead the dough by hand or with a mixer fitted with a dough hook for 8–10 minutes until smooth and elastic.
    • Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Filling:
2. Cook the Eggs:

  • In a bowl, whisk the eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat and scramble the eggs until just set. Remove from heat.
  1. Assemble the Rolls:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • If using pre-made dough, roll it out into a large rectangle on a lightly floured surface. Cut into 8–10 smaller rectangles.
    • Place a spoonful of scrambled eggs, crumbled bacon, and shredded cheese onto each rectangle. Fold and pinch the edges of the dough to seal the filling inside, forming a roll.
  2. Bake the Rolls:
    • Place the rolls seam-side down on the prepared baking sheet. Brush the tops with melted butter (mix with garlic powder if desired).
    • Bake for 15–20 minutes, or until the rolls are golden brown.
  3. Serve:
    • Let the rolls cool slightly before serving. Enjoy warm!
