6 large eggs
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
1/2 cup cooked breakfast sausage or crumbled bacon
1 cup shredded cheddar cheese
8 small flour or corn tortillas
2 tbsp butter
Cooking spray or oil, for baking
Salsa, for serving (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray or oil.
In a medium bowl, whisk together eggs, milk, salt, and pepper.
In a nonstick skillet over medium heat, melt butter. Add egg mixture and cook, stirring gently, until scrambled and just set. Remove from heat and stir in cooked sausage or bacon.
Warm tortillas in the microwave for about 20 seconds to make them pliable.
Place a spoonful of scrambled eggs and a sprinkle of cheese in the center of each tortilla. Roll up tightly and place seam side down on the prepared baking sheet.
Lightly spray the tops of the taquitos with cooking spray to help them crisp up.
Bake for 12-15 minutes, or until golden brown and crispy.
Serve warm with salsa or your favorite dipping sauce.
