4 boneless, skinless chicken breasts
1 cup finely chopped steamed broccoli
1 cup shredded sharp cheddar cheese
2 tablespoons cream cheese, softened
1 clove garlic, minced
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Toothpicks, for securing
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
In a bowl, mix chopped broccoli, cheddar cheese, cream cheese, garlic, onion powder, salt, and pepper until well combined.
Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
Stuff each chicken breast with the broccoli-cheddar mixture and secure the opening with toothpicks.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken breasts for 2–3 minutes per side until golden.
Transfer skillet to the oven (or transfer chicken to a baking dish) and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
Remove toothpicks before serving. Let rest 5 minutes, then serve warm.
Notes
Use a meat mallet to slightly flatten thicker parts of the chicken for even cooking.
Add a pinch of red pepper flakes to the filling for a little heat.
This dish pairs well with rice, mashed potatoes, or a simple salad.
