These Broccoli Cheese Balls are crispy on the outside, cheesy and tender on the inside, and packed with the goodness of broccoli. Perfect as a snack, appetizer, or side dish, they’re quick to make and incredibly satisfying!

Ingredients

  • 2 cups (180 g) fresh broccoli florets, finely chopped
  • 1 cup (100 g) shredded cheddar cheese
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1 cup (100 g) breadcrumbs (divided)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 2 tablespoons chopped parsley (optional)
  • Cooking spray or oil for greasing

Instructions

  1. Prepare the broccoli:
    • Steam or blanch the broccoli florets until tender (about 5 minutes). Drain well and finely chop. Allow to cool slightly.
  2. Mix the ingredients:
    • In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, 1/2 cup breadcrumbs, eggs, garlic powder, onion powder, salt, pepper, smoked paprika, and parsley (if using). Mix until well combined.
  3. Form the balls:
    • Scoop about 1-2 tablespoons of the mixture and roll it into a ball. Repeat with the remaining mixture.
  4. Coat the balls:
    • Place the remaining 1/2 cup of breadcrumbs in a shallow dish. Roll each broccoli ball in the breadcrumbs to coat evenly.
  5. Bake the broccoli cheese balls:
    • Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper. Arrange the coated balls on the baking sheet and spray lightly with cooking spray.
    • Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  6. Serve:
    • Serve warm with your favorite dipping sauce, such as ranch, marinara, or a spicy aioli.


Notes

  • Air fryer option: Cook the balls in an air fryer at 375°F (190°C) for 12-15 minutes, flipping halfway through.
  • Customizations: Add cooked bacon bits or swap the cheddar for mozzarella or pepper jack for extra flavor.
  • Make ahead: Prepare and form the balls in advance, then refrigerate for up to 24 hours before baking.
