This Brown Sugar Banana French Toast Casserole is a decadent breakfast treat perfect for any occasion. Layers of soft bread soaked in a cinnamon-spiced custard, caramelized bananas, and a brown sugar topping create a rich, sweet, and satisfying dish. For the Casserole:

  • 1 loaf of brioche or challah bread, cubed (about 8 cups)
  • 4 large bananas, sliced
  • 6 large eggs
  • 2 cups (480 ml) whole milk
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (100 g) brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg

For the Topping:

  • 1/4 cup (50 g) brown sugar
  • 1/4 cup (30 g) all-purpose flour
  • 1/4 cup (55 g) unsalted butter, cold and cubed
  • 1/2 tsp cinnamon

Optional Garnishes:

  • Maple syrup
  • Powdered sugar
  • Fresh banana slices

Instructions

  • Prepare the Bread:
    • Grease a 9×13-inch baking dish. Arrange the bread cubes evenly in the dish. Tuck the banana slices between the bread cubes.
  • Make the Custard:
    • In a large mixing bowl, whisk together eggs, milk, cream, brown sugar, vanilla, cinnamon, and nutmeg until smooth.
    • Pour the mixture evenly over the bread and bananas, pressing gently to ensure all the bread is soaked. Cover and refrigerate for at least 1 hour or overnight.
  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Topping:
    • In a small bowl, mix brown sugar, flour, cinnamon, and butter until crumbly. Sprinkle the topping evenly over the casserole.
  • Bake: Bake uncovered for 35-40 minutes, or until the top is golden and the custard is set.
  • Serve: Let the casserole cool for 5 minutes. Serve warm with maple syrup, powdered sugar, or fresh banana slices.
