- 1 cup all-purpose flour
- ½ cup cold unsalted butter, cubed
- ½ cup brown sugar, packed (for crust)
- 1 large egg yolk
- 1 tsp vanilla extract
- ½ tsp salt
- 1 cup brown sugar, packed (for filling)
- 2 large eggs
- ½ cup heavy cream or half-and-half
- 1 tsp cinnamon (optional)
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- In a bowl, mix flour, ½ cup brown sugar, salt, and cubed butter until crumbly. Stir in egg yolk and vanilla to form crust mixture.
- Press two-thirds of the crust mixture into the pan and bake for 12–15 minutes until lightly golden.
- Meanwhile, whisk 1 cup brown sugar, eggs, cream, and cinnamon for the filling until smooth.
- Pour filling over baked crust and sprinkle remaining crust mixture on top.
- Bake an additional 20–25 minutes until filling is set and top is golden brown.
- Cool completely in the pan, then refrigerate for 2 hours before slicing into squares.
- Lift out using parchment overhang and cut into 16 squares.
Notes
- Use dark brown sugar for deeper caramel flavor.
- Bars can be frozen and thawed for later use.
- Add chopped pecans or walnuts to the topping for crunch.
