Buttery dessert bars with a rich brown sugar custard filling over a tender shortbread-like crust—perfect for a sweet treat with coffee or tea.

  • 1 cup all-purpose flour
  • ½ cup cold unsalted butter, cubed
  • ½ cup brown sugar, packed (for crust)
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup brown sugar, packed (for filling)
  • 2 large eggs
  • ½ cup heavy cream or half-and-half
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix flour, ½ cup brown sugar, salt, and cubed butter until crumbly. Stir in egg yolk and vanilla to form crust mixture.
  3. Press two-thirds of the crust mixture into the pan and bake for 12–15 minutes until lightly golden.
  4. Meanwhile, whisk 1 cup brown sugar, eggs, cream, and cinnamon for the filling until smooth.
  5. Pour filling over baked crust and sprinkle remaining crust mixture on top.
  6. Bake an additional 20–25 minutes until filling is set and top is golden brown.
  7. Cool completely in the pan, then refrigerate for 2 hours before slicing into squares.
  8. Lift out using parchment overhang and cut into 16 squares.

Notes

  • Use dark brown sugar for deeper caramel flavor.
  • Bars can be frozen and thawed for later use.
  • Add chopped pecans or walnuts to the topping for crunch.
  • Serve with a dollop of whipped cream for extra indulgence.
  • Best served chilled or at room temperature.
