These Brown Sugar Pop Tart Cookies are soft, chewy, and packed with nostalgic brown sugar-cinnamon flavor. Finished with a sweet glaze, they taste just like the classic toaster pastry—only better.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup crushed brown sugar Pop-Tarts (about 23 Pop-Tarts)
  • 1/2 cup white chocolate chips (optional)
  • For the glaze:
  • 1 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla extract, beating until combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in crushed Pop-Tarts and white chocolate chips if using.
  7. Drop dough by rounded tablespoons onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the pan for 5 minutes, then transfer to a wire rack.
  9. In a small bowl, whisk together glaze ingredients until smooth. Drizzle over cooled cookies and let set before serving.

Notes

  • Chill dough for 20 minutes for thicker cookies.
  • Use any leftover Pop-Tarts as decorative crumbles on top of the glaze.
  • Store in an airtight container for up to 4 days or freeze for longer storage.
