  • 1/4 cup (55 g) unsalted butter
  • 1/3 cup (65 g) brown sugar, packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional, for a subtle smoky flavor)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or line a baking sheet with parchment paper.
  2. Prepare the potatoes:
    • Rinse the potatoes and pat them dry. Halve them if they’re larger than bite-sized.
  3. Make the brown sugar glaze:
    • In a small saucepan over medium heat, melt the butter. Add the brown sugar, salt, pepper, and smoked paprika (if using). Stir until the mixture is smooth and slightly thickened, about 2 minutes.
  4. Coat the potatoes:
    • Place the potatoes in a large mixing bowl. Pour the brown sugar glaze over them and toss to coat evenly.
  5. Bake the potatoes:
    • Transfer the coated potatoes to the prepared baking dish, spreading them out in a single layer. Roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and caramelized.
