Ingredients
Scale
2 lbs (900 g) baby potatoes, halved (or small red or Yukon Gold potatoes)
1/4 cup (55 g) unsalted butter
1/3 cup (65 g) brown sugar, packed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional, for a subtle smoky flavor)
Fresh parsley, chopped (optional, for garnish)
Instructions
Preheat the oven:
Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or line a baking sheet with parchment paper.
Prepare the potatoes:
Rinse the potatoes and pat them dry. Halve them if they’re larger than bite-sized.
Make the brown sugar glaze:
In a small saucepan over medium heat, melt the butter. Add the brown sugar, salt, pepper, and smoked paprika (if using). Stir until the mixture is smooth and slightly thickened, about 2 minutes.
Coat the potatoes:
Place the potatoes in a large mixing bowl. Pour the brown sugar glaze over them and toss to coat evenly.
Bake the potatoes:
Transfer the coated potatoes to the prepared baking dish, spreading them out in a single layer. Roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and caramelized.
Serve:
Sprinkle with fresh parsley if desired and serve warm.
Notes
For extra caramelization, broil the potatoes for 2-3 minutes at the end of baking.
You can add chopped pecans or walnuts to the potatoes before baking for a nutty crunch.
Sweet potatoes can be used instead of regular potatoes for an even sweeter variation.
