A delicious Brussels sprouts Parmesan pasta featuring caramelized shredded Brussels sprouts tossed with tender pasta, garlic, and plenty of freshly grated Parmesan — a simple, cozy vegetarian meal.

  • 8 oz spaghetti or linguine
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cups Brussels sprouts, trimmed and thinly sliced
  • 3 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • Salt and black pepper, to taste
  • 1/4 cup reserved pasta water
  • 1 tbsp fresh lemon juice (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. In a large skillet, heat olive oil and butter over medium heat. Add shredded Brussels sprouts and sauté for 6-8 minutes until golden and tender.
  3. Add minced garlic and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.
  4. Add cooked pasta to the skillet with Brussels sprouts. Pour in reserved pasta water and toss to combine.
  5. Remove from heat and stir in Parmesan cheese. Season with salt, black pepper, and lemon juice if using.
  6. Serve immediately, topped with extra Parmesan if desired.

  • Use a food processor to shred Brussels sprouts quickly.
  • Try adding crispy bacon or pancetta for a meaty twist.
  • Fresh lemon zest adds extra brightness to the dish.
