This savory Bundt cake breakfast is a fun and hearty twist on traditional breakfast casseroles. Packed with eggs, bacon, sausage, cheese, and hash browns, it’s perfect for feeding a crowd during brunch or a holiday morning. The bundt shape makes it both beautiful and easy to serve.

Ingredients

Scale
  • 1 pound (450 g) breakfast sausage, crumbled
  • 6 slices bacon, cooked and crumbled
  • 2 cups frozen hash browns, thawed
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped green onions (optional)
  • 8 large eggs
  • 1 cup (240 ml) milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • Non-stick cooking spray

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Spray a Bundt pan generously with non-stick cooking spray.
  2. Cook the sausage:
    • In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain any excess grease and set aside.
  3. Mix the ingredients:
    • In a large bowl, combine the cooked sausage, crumbled bacon, hash browns, cheddar cheese, mozzarella cheese, and green onions (if using).
  4. Prepare the egg mixture:
    • In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Assemble the Bundt cake:
    • Pour the egg mixture over the sausage and hash brown mixture. Stir gently to combine.
    • Pour the mixture evenly into the prepared Bundt pan, pressing it down lightly to ensure even cooking.
  6. Bake:
    • Bake in the preheated oven for 40–45 minutes, or until the eggs are set and the top is golden brown.
  7. Cool and serve:
    • Let the Bundt cake cool in the pan for 5–10 minutes before carefully inverting it onto a serving platter. Slice into wedges and serve warm.
