A rich and creamy dressing featuring garlic, anchovies, lemon juice, Dijon mustard, Worcestershire sauce, mayonnaise, and Parmesan cheese, delivering the classic Caesar flavor.

Ingredients

  • 2 small garlic cloves, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise
  • ½ cup freshly grated Parmigiano-Reggiano
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

 

  1. Combine Ingredients: In a medium bowl, whisk together the minced garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce until well blended.
  2. Add Mayonnaise and Cheese: Add the mayonnaise and grated Parmigiano-Reggiano to the mixture, whisking until smooth and creamy.
  3. Season: Stir in the salt and freshly ground black pepper. Taste and adjust seasoning as needed.
  4. Chill: Cover the bowl and refrigerate the dressing for at least 30 minutes to allow the flavors to meld.

Notes

  • Anchovy Paste: If you prefer not to use anchovy paste, you can substitute with 2 minced anchovy fillets or omit it entirely for a milder flavor.
  • Mayonnaise Substitute: For a lighter version, substitute half of the mayonnaise with plain Greek yogurt.
  • Storage: Store the dressing in an airtight container in the refrigerator for up to one week.
