1 large head romaine lettuce, chopped
1 cup croutons
1/3 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
1 garlic clove, minced
2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons Worcestershire sauce
1/4 cup freshly grated Parmesan (for dressing)
Salt and freshly ground black pepper, to taste
2 tablespoons extra-virgin olive oil
Instructions
In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, 1/4 cup grated Parmesan, olive oil, salt, and pepper until smooth and creamy.
Place chopped romaine in a large salad bowl.
Add croutons and drizzle with the dressing. Toss well to coat evenly.
Sprinkle with remaining freshly grated Parmesan before serving.
Notes
For extra flavor, add anchovy paste to the dressing if desired.
