Caesar Vinaigrette is a lighter, zesty take on classic Caesar dressing, blending bold flavors like garlic, anchovy, and Parmesan into a tangy vinaigrette perfect for salads or marinades.

Ingredients

Scale
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 2 anchovy fillets, minced (or 1 teaspoon anchovy paste)
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. In a medium bowl, whisk together lemon juice, Dijon mustard, red wine vinegar, garlic, and anchovy until well combined.
  2. Slowly drizzle in olive oil while whisking constantly to emulsify the dressing.
  3. Stir in Parmesan cheese and black pepper.
  4. Taste and adjust seasoning with salt if needed.
  5. Refrigerate for 15-20 minutes before serving for best flavor.

Notes

  • Use anchovy paste for quicker prep if preferred.
