This Cajun chicken with sweet peppers is a bold and colorful one-pan meal that’s full of smoky spice and juicy flavor. Tender chicken strips are tossed with Cajun seasoning and sautéed with bell peppers and onions for a quick dinner that’s great on its own or served over rice, pasta, or in wraps.

  • 1 lb boneless, skinless chicken breasts, cut into thin strips

  • 1 tablespoon Cajun seasoning (store-bought or homemade)

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small red onion, sliced

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • Optional: fresh parsley or green onions, for garnish

  • Optional: lime wedges for serving

Instructions

  1. Toss the chicken strips with Cajun seasoning until evenly coated.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add chicken to the pan and cook for about 5–6 minutes, or until browned and cooked through. Remove and set aside.

  4. In the same skillet, add a little more oil if needed, then sauté the bell peppers and onion for 4–5 minutes, until slightly softened.

  5. Add garlic and cook for 30 seconds more, stirring often.

  6. Return the chicken to the skillet and toss everything together. Cook for 1–2 more minutes until heated through.

  7. Taste and adjust seasoning with extra salt, pepper, or Cajun spice if needed.

  8. Garnish with fresh parsley or green onions and a squeeze of lime, if desired. Serve hot.

Notes

  • Great served over rice, cauliflower rice, or tucked into tortillas for Cajun chicken wraps.

  • For extra heat, add a pinch of cayenne or crushed red pepper.

  • Use a mix of bell peppers for a sweeter, more colorful dish.
