This Cajun Chicken is bold, juicy, and full of spicy Southern flavor. It’s seasoned with a simple homemade Cajun spice mix and cooked to perfection in just one pan. Serve it over rice, in tacos, or sliced on top of a salad for a quick and flavorful meal.

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • Optional: lemon wedges and chopped parsley for serving

Instructions

  1. In a small bowl, mix together paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt.

  2. Pat chicken dry with paper towels. Rub both sides with olive oil and coat evenly with the Cajun seasoning.

  3. Heat a skillet over medium-high heat.

  4. Add the chicken and cook for about 5–6 minutes per side, or until golden and cooked through (internal temp should reach 165°F).

  5. Let rest for 5 minutes, then slice and serve with lemon wedges and chopped parsley if desired.

Notes

  • For extra juicy chicken, pound the breasts to an even thickness before seasoning.

  • This recipe also works great with chicken thighs.

  • Serve with rice, roasted veggies, or in wraps and sandwiches.
