A hearty and flavorful Cajun-style fish soup made with fresh vegetables, tender white fish, and bold spices for a warming, Southern-inspired dish.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups fish stock or seafood broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1 bay leaf
  • 1 pound white fish fillets (such as cod or tilapia), cut into chunks
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and celery; sauté for about 5 minutes until softened.
  3. Stir in the garlic and cook for another 1 minute until fragrant.
  4. Add the diced tomatoes with their juice and stir well.
  5. Pour in the fish stock and add Cajun seasoning, smoked paprika, cayenne pepper (if using), and the bay leaf.
  6. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  7. Add the fish chunks and simmer for another 5-7 minutes until the fish is cooked through and flakes easily.
  8. Season with salt and black pepper to taste.
  9. Stir in parsley and lemon juice just before serving.
