A hearty and flavorful Cajun Sausage and Rice Skillet made with smoked sausage, bell peppers, and seasoned rice. This one-pan dish is perfect for a quick weeknight dinner with a spicy kick.

Ingredients

  • 1 tablespoon olive oil
  • 14 oz smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 green onions, sliced (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same skillet, sauté diced onion and bell peppers for 3-4 minutes until softened.
  4. Add garlic and cook for another 30 seconds until fragrant.
  5. Stir in rice, Cajun seasoning, paprika, salt, and pepper. Toast rice for 1-2 minutes.
  6. Pour in chicken broth and return sausage to the skillet. Stir to combine.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  8. Fluff with a fork and garnish with green onions before serving.

Notes

  • Adjust Cajun seasoning to taste — some blends can be quite spicy.
  • Use turkey sausage for a lighter version.
  • Leftovers store well and make a great meal prep option.
