These Cake Mix Cookie Bars are soft, chewy, and incredibly easy to make using a simple box of cake mix! With just a few extra ingredients, you’ll have a delicious, buttery bar cookie that’s perfect for any occasion.

  • 1 box (15.25 oz) yellow cake mix (or any flavor)
  • ½ cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 1 cup chocolate chips (or M&M’s, sprinkles, or nuts)

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 9×13-inch baking pan with parchment paper.

Step 2: Mix the Dough

  1. In a large bowl, combine cake mix, melted butter, eggs, and vanilla extract. Stir until well combined (the batter will be thick).
  2. Fold in chocolate chips or other mix-ins of your choice.

Step 3: Bake

  1. Spread the dough evenly into the prepared baking pan.
  2. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
