These Campfire Nachos are loaded with melted cheese, crunchy chips, and your favorite toppings, all cooked to gooey perfection over a fire or grill. Easy to assemble and totally customizable, they’re perfect for camping trips, picnics, or outdoor gatherings.

Ingredients

  • 1 bag (10 oz) tortilla chips
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup cooked and seasoned ground beef, chicken, or chorizo (optional)
  • 1 small red onion, diced
  • 1 jalapeño, sliced (optional)
  • ½ cup diced tomatoes or pico de gallo
  • ½ cup sliced black olives (optional)
  • 1 avocado, diced or sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Optional Toppings:

  • Sour cream
  • Salsa
  • Guacamole
  • Hot sauce


Instructions

  1. Prepare the Fire or Grill:

    • Set up your campfire or preheat your grill to medium heat. You can also use a fire pit or an oven if you’re making these at home.
  2. Layer the Nachos:

    • In a large cast-iron skillet, Dutch oven, or aluminum foil pan, layer half the tortilla chips, followed by half the cheese, beans, meat (if using), onion, jalapeño, tomatoes, and olives.
    • Repeat with the remaining chips and toppings to create two layers.
  3. Cook the Nachos:

    • Cover the skillet with aluminum foil.
    • Place over the campfire grill or on a rack above the fire (or close the grill lid). Cook for 10-15 minutes, or until the cheese is melted and the nachos are heated through.
  4. Garnish and Serve:

    • Remove from the heat and let cool for a minute or two.
    • Top with avocado, cilantro, and a squeeze of lime juice. Serve with sour cream, salsa, or guacamole on the side.


Notes

  • Use sturdy chips to prevent sogginess.
  • For a vegetarian version, skip the meat and add extra beans, corn, or bell peppers.
  • Want extra crunch? Add a layer of crushed Doritos between chips for a fun twist.
