Caprese Stuffed Chicken Breast is a flavorful, juicy chicken dish filled with fresh mozzarella, tomatoes, and basil, then seared and baked to perfection. It’s a perfect low-carb, high-protein meal.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, cut a pocket in each chicken breast by slicing horizontally without cutting all the way through.
  3. Season the chicken with Italian seasoning, salt, and pepper.
  4. Stuff each chicken breast with slices of mozzarella, tomato, and basil leaves.
  5. Secure with toothpicks if necessary.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat.
  7. Add the garlic and cook for 30 seconds.
  8. Sear the chicken breasts for 3–4 minutes on each side until golden brown.
  9. Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is cooked through.
  10. Drizzle with balsamic glaze before serving if desired.

Notes

  • Use sun-dried tomatoes for a more intense flavor.
  • Fresh basil adds the best flavor, but dried can be used in a pinch.
  • Secure with toothpicks to prevent stuffing from falling out.
