6 cups peeled, cored, and finely chopped apples (about 6 medium apples)
1/4 cup lemon juice
1/2 cup water
1 package (1.75 oz) fruit pectin
2 cups granulated sugar
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/8 teaspoon salt
Instructions
Prepare jars and lids by sterilizing them in boiling water and keeping them warm until ready to use.
In a large, heavy-bottomed pot, combine apples, lemon juice, and water. Bring to a simmer over medium heat and cook until apples are tender, about 10 minutes.
Stir in pectin and bring mixture to a full rolling boil over high heat, stirring constantly.
Add granulated sugar, brown sugar, cinnamon, nutmeg, allspice, and salt. Return to a full boil and boil hard for 1–2 minutes, stirring constantly.
Remove from heat and skim off any foam. Ladle hot jam into prepared jars, leaving 1/4-inch headspace.
Wipe rims, apply lids, and process in a boiling water bath for 10 minutes (adjust time for altitude as needed).
Let jars cool for 24 hours. Check seals and store in a cool, dark place. Refrigerate after opening.
Notes
Use a mix of tart and sweet apples for a more complex flavor.
Jam may take 24–48 hours to fully set after canning.
Delicious on toast, biscuits, pancakes, or as a filling for pastries.
