1 double pie crust (store-bought or homemade)
6 cups thinly sliced and peeled apples (Granny Smith or Honeycrisp)
2/3 cup granulated sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 cup caramel sauce, plus more for drizzling
1 tablespoon butter, cut into small pieces
1 egg, beaten (for egg wash)
Instructions
Preheat oven to 400°F (200°C). Place bottom pie crust into a 9-inch pie dish.
In a large bowl, toss sliced apples with lemon juice, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt until evenly coated.
Pour half of the apple mixture into the prepared crust. Drizzle with half of the caramel sauce. Repeat with remaining apples and caramel.
Dot the top with small pieces of butter.
Cover with the top crust, seal the edges, and cut slits for steam. Brush with beaten egg.
Bake for 45–50 minutes, or until the crust is golden and filling is bubbly. Cover the edges with foil if they brown too quickly.
Let cool slightly, then drizzle with additional caramel sauce before serving.
Notes
Serve warm with vanilla ice cream for an extra treat.
Use homemade or store-bought caramel sauce.
Pie can be made a day in advance and reheated before serving.
